Ingredients
1 kg of hen liver
500 g of pennies
2-3 tomatoes finely chopped
1 onion dry chopped
1 clove of garlic chopped
Salt
Oil
Pepper
Paprika sweet

Method
In salted boiling water, boil the pens for 10 minutes and then let them drain. Do not boil them too much because they will continue cooking with the liver. From the water we drained we keep 2 glasses of water.
In a saucepan, put the oil and sauté the jelly. Then put the onion and garlic, sauté them for 2 minutes, and then add the tomatoes and saute them for 2 minutes. With a leash spoon, pour the pens into the liver casserole, add as much water as needed to keep the pens and absorb all the flavor of the sauce. Five minutes before we turn off the heat, add the pepper and paprika. We serve very warmly.
