Ingredients for minced meat
500 g of beef mince
4 slices of bread soaked and set
1 onion dry chopped
2 cloves of garlic chopped
A little parsley finely chopped
A little mint chopped
Some oregano dry grated
1 tablespoon of mustard
2 tablespoons of olive oil for minced meat
Olive oil for frying
In a bowl we put all our ingredients. We knead very well to tie all our ingredients and put it in the refrigerator for at least two hours. Then remove them from the refrigerator and knead them again well before we cook and fry them. We feed the meatballs and put them on a tray.
In a pan, let the olive oil burn and add the meatballs. Not too close to each other to fry them evenly and quickly. Fry them on both sides until they get a golden color.
1 1/2 kilo of chicory or that we like grasses
We get what we like (we have one and a half pounds of chicory here), clean them well and put them in a basin of water and vinegar for five minutes. Vinegar kills that mummy may have the greens. Then wash as many hands as water to avoid soil. Finally, put the water in the pan until the waist is allowed to boil and pour the greens. With a fork we push them to cover with water and be careful not to inflate us and drop the water in the kitchen. Boil them as long as we like the cooked greens.
We can accompany them with fries or baked potatoes or fish with anchovies or sardines.
