Ingredients for dough
1 kg of flour for all uses
1 1/2 glass of olive oil
Water as long as it gets for a tight dough
In a bowl, put the flour in the olive oil and start kneading it. A little bit of water is added, just enough to have a tight dough. Cut them into small balls and place them in a pan and let them rest for about an hour.
Ingredients for filling
4-5 leeks long cut into washers
1 onion dry chopped
1 bunch of dill (or parsley)
1 cup of brown rice Carolina
3-4 tablespoons of olive oil
In a saucepan, add the olive oil and sauté the leeks and the onion for 5 minutes. Then add rice, salt, dill, pepper and some water. Boil it in a low heat until the rice is polluted. We put water so that the rice is drunk and the mixture is not reduced. Let it cool to cool down.
Finally we take the balls of the dough and with a rolling pin we open them in small pies. With a spoon add the mixture in the middle of the pie. Turn half the pie over the mixture and with a fork press it well to close and do not open on baking. Bake them in a preheated oven at 180-190 degrees until they get beautiful golden color on both sides.
