1 kg of cherries cleaned
700 g of sugar
Juice of half a lemon
Wash the cherries well and remove the stalks. Pick the seeds over the pot to keep all the juices they are going to produce. Pots are removed either with the special tool or with a hair clipper.
We cough the cherries with the tool of puree to melt lightly. If we want it, we pass the cherries from the blender.
Put the cherries in the pan in layers alternating with the sugar and leave them for 6-7 hours to take out their juices.
After 6-7 hours we put them on a high heat.
When boiling, we lower the heat and scrape off the foams that appear on the surface.
Boil the jam about 35-40 minutes.
Just before turning off the fire add the lemon juice and mix with a wooden spoon.
Store it in sterile jars.
