1 kg of cherries cleaned
750 g of cognac
1 glass of tsipouro wine
700 g of sugar
1 cinnamon stick
Juice of half a lemon
Wash the cherries well, remove the stalks, and dry them with kitchen towels.
Then remove the pits with the special tool or with a hairpin tweezer. We clean them over a bowl to keep all the juices they are going to make.
When we clean them all put them in a bowl in layers alternating with sugar. When we finish, we pour over the juice that took the cherries from the cleaning.
Cover the bowl well and put it in the refrigerator for 2 days to remove all the liquids from the cherries and melt the sugar.
After 2 days put the cherries together with the syrup that have been put into a sterilized jar that closes well, add cinnamon, carnations, tsipouro and cognac.
We seal the jar well and mix the ingredients a little.
Leave it in a shady place near the sun for 40 days.
When our drink is ready, pour the lemon juice and strain it well with a dumbbell.
Put it in glass bottles and our liqueur is ready.
