1 kg of nectarines
750 g of sugar
2 tablespoons of honey
1/2 glass of water
Juice of half a lemon
We clean the nectarines from the peels, and cut into thick slices by removing the slices.
In a saucepan, add water, sugar and honey to a soft heat and boil for 10 minutes.
Then add the slices of nectarines, simmer until the syrup is slightly attached and the fire is turned off.
Leave all the evening in the pot to remove all its liquids.
In the morning, simmer again until the syrup ties well.
Before we remove it, add the lemon juice and let it boil.
We turn off the heat, let it cool down and if we see how it gets wet, boil it a bit longer. To see if it tied the syrup we put on a little platter and let it cool down.
When it is cold, we tilt the plate slightly and if it does not run it is ready.
